In a 10-inch cast-iron skillet*, melt butter over medium heat. Add the onions and 1/2 tsp. of the salt. Cook until browned, 10 – 15 min., stirring occasionally. Take off the heat

Preheat oven to 450°. Add sweet potatoes, garlic, thyme, pepper, parsley and remaining salt to the pan with the onions. Stir to combine everything. Place skillet into the oven uncovered to roast for 30 – 45 min., until potatoes are tender, toss everything halfway through

Add spinach to the skillet, and stir to combine. Make 6 wells in the potatoes, crack an egg into each hole. Season with a sprinkle of salt and pepper. Place back into the oven for 6 to 10 min** until eggs are cooked to your liking. Serve with the sprinkling of goat cheese (optional) and toast for dipping (optional)
