Combine cherries, 1 cup of sugar, corn starch and lemon juice in a seasoned cast iron skillet. Dot top with 2 Tbsp. of butter and set aside

Combine baking mix with 1 Tbsp. of butter and milk in a mixing bowl. Stir with a wooden spoon until just combined. (Do not overmix.)

Drop by spoonful over the top of the cherry mixture, covering evenly but not completely. (Cobbler topping will spread during cooking.)

Cool on wire rack for 10 min. Serve hot with vanilla ice cream or whipped cream
