Simple Chile-Spiced Scalloped Potatoes

Scalloped potatoes with melt-in-the-mouth creamy cheese and butter are spiced with chili powder. A delectable side dish, that the whole family will enjoy.

Preheat oven to 375ยบ. Prepare a 7" x 11" baking dish with cooking spray

In a small saucepan, combine milk, butter, garlic, chile powder, cumin, oregano, and cayenne pepper. Cook, stirring, over medium heat just until butter melts, then remove from heat. NOTE: Do not let the mixture boil

Arrange 1/3 of potato slices in a prepared baking dish, overlapping slightly. Pour 1/3 of milk mixture over the potatoes and season with salt and pepper. Top with 1/3 of the shredded cheese. Repeat, making two more layers

Bake until the potatoes are tender and the cheese is melty and golden brown, about 45 min

Remove to cooking rack and dust with a sprinkle of chile powder; let rest 15 min. before serving
