Herbed Boneless Beef Rib Eye Roast
Roasted in garlic and herbs, this rib eye roast is perfect for a relaxing weekend or holiday gathering!
Ingredients
5 lbs. boneless beef rib eye roast, fat trimmed to 1/4" (Order free custom roasts in-Club)
3 tsp. Pompeian Pure Olive Oil, divided
1 tsp. Spice World Squeeze Garlic
1 1/2 tsp. McCormick Basil
1/2 tsp. McCormick Rosemary
1/2 tsp. McCormick Ground Black Pepper
Sea salt, to taste
Directions
1. 30 min. before cooking, remove roast from refrigerator and preheat oven to 425°
2. In bowl, combine 2 tsp. oil, garlic, basil and rosemary; press into the roast, covering surface evenly
3. Heat rest of oil in large skillet on medium-high. Brown roast thoroughly on all sides
4. Transfer roast to shallow roasting pan and insert an ovenproof meat thermometer at thickest point. NOTE: Ensure tip is inserted into meat, not fat. Place uncovered pan in oven
5. Cook until 135° in the center for medium-rare (35 to 40 min.), 150° in the center for medium (45 to 50 min.)
6. Transfer roast to carving board, tent with foil and rest 15 min. to finish cooking
7. Carve into 1/2" thick slices and serve
