Grilled Kansas City BBQ Country Rib

Ingredients

1 package (about 4 pounds) Wellsley Farms® Fresh Pork Loin Bone-In Country Style Ribs, halved crosswise
1/2 Wellsley Farms. Kansas City BBQ Rub
4 garlic cloves, minced
1/2 cup Wellsley Farms® Unsalted Butter, melted
3 tablespoons apple cider vinegar
8 slices Wellsley Farms® White Bread
2 cups bread-and-butter pickle chips (or sprinkle with dill pickle seasoning)

Directions

  1. Rub ribs with 1/4 cup seasoning; place in large zip-top plastic bag. Seal bag, pressing out excess air; refrigerate at least 2 or up to 12 hours.

  2. In small bowl, stir garlic, butter, vinegar and remaining 1/4 cup seasoning.

  3. Prepare outdoor grill with all the burners on high. Once preheated, turn off 1 of the burners for a 2-burner grill, or center burner for a 3-burner grill; reduce remaining burners to medium-low. Place ribs on hot grill rack over unlit part of grill; cover and cook 1 hour 40 minutes or until internal temperature reaches 155°, turning and brushing with garlic mixture once. Move ribs to hot grill rack over lit part of grill and baste with garlic mixture; cover and cook 20 minutes or until slightly charred and internal temperature reaches 200°, turning and basting with any remaining garlic mixture frequently. Transfer ribs to cutting board; tent with aluminum foil and let stand 10 minutes.

  4. Serve ribs with bread and pickle chips.
