Cedar Plank Salmon with Pineapple Salsa

A quick and healthy meal that's perfect for grilling outdoors. The flavorful salmon fillet is topped with a zesty pineapple salsa, making it a delicious and satisfying dish that serves six.

Cedar Plank Salmon with Pineapple Salsa

Ingredients

1 cedar grilling plank
1 1/4 cups chopped fresh pineapple
1/2 cup finely chopped red bell pepper
1/4 cup finely chopped red onion
3 tablespoons fresh lime juice
1 tablespoon chopped fresh cilantro
4 teaspoons Wellsley Farms® Pure Olive Oil
1/4 teaspoon plus 1/8 teaspoon Wellsley Farms® Fine Table Salt
1 Wellsley Farms® Whole Norwegian Salmon Fillet (about 1 3/4 pounds)
1 tablespoon packed brown sugar

 

Directions

  1. Immerse plank in warm water as label directs. Prepare outdoor grill for direct grilling over medium-high heat.
     
  2. In large bowl, stir pineapple, pepper, onion, 2 tablespoons lime juice, cilantro, 2 teaspoons oil and 1/8 teaspoon salt; cover and refrigerate. Makes about 2 cups.
     
  3. Place salmon, skin side down, on prepared plank and brush remaining 2 teaspoons oil over top; sprinkle with brown sugar and remaining 1/4 teaspoon salt. Place plank with salmon on hot grill rack; cover and cook 20 minutes or until salmon turns opaque throughout and internal temperature reaches 145°.
     
  4. Drizzle salmon with remaining 1 tablespoon lime juice; top with pineapple salsa.
