Brownie Sundaes with Avocado Ice Cream

Ice cream Sundaes on top of delicious home-made brownies. A classic dessert that everyone loves!

Brownie Sundaes with Avocado Ice Cream

Ingredients

3 medium ripe avocados
1/2 cup heavy cream, divided
1 cup plain nonfat Greek yogurt
1 tbsp. lime juice
2 tbsp. agave nectar
1 tsp. vanilla extract
Pinch of salt
1 cup chocolate chips
1/4 cup shelled pistachios, roughly chopped

 

Directions

1. Cut the avocados in half, remove the pits, and scoop out the flesh
2. Place avocado, 1/4 cup of cream and remaining ingredients through salt, in a food processor or blender and combine until smooth
3. Transfer contents to the bowl of an ice cream maker and freeze according to the manufacturer’s directions. Ice cream can be eaten right away or placed in the freezer for 1 to 2 hours for firmer ice cream
4. While ice cream freezes, combine chocolate chips and remaining cream in a microwave-safe bowl. Heat on high for 1min., stirring once or twice during cook time. Remove from microwave and stir until chips are melted and sauce is smooth. Cool slightly
5. Place a scoop of avocado ice cream on top of each brownie bite, top with chocolate sauce and sprinkle with chopped pistachios
