Air Fryer Pork Carnitas

Ingredients

2 pounds Wellsley Farms® Whole Steak Ready Bone-in Pork Shoulder Butt, bones removed and cut into 2-inch pieces
4 refrigerated peeled garlic cloves, minced
1 Wellsley Farms® Navel Orange, zested and juiced (about 1 tablespoon zest and 1/4 cup juice)
3 tablespoons Wellsley Farms® Canola Oil
1 tablespoon hot sauce plus additional for serving (optional)
1 tablespoon Wellsley Farms® Taco Seasoning
2 teaspoons Wellsley Farms® Oregano
12 fajita size flour tortillas, warmed
1 cup finely chopped Wellsley Farms® Yellow Onion
1/2 cup chopped fresh cilantro
Wellsey Farms® Limes, cut into wedges for garnish (optional)

Directions

  1. Add pork, garlic, orange zest, orange juice, oil, hot sauce, seasoning and oregano to large zip-top plastic bag; seal bag, pressing out excess air. Massage pork in bag to coat; refrigerate at least 4 hours or up to overnight.

  2. Line 4- to 5-quart air fryer with aluminum foil; preheat to 350° for 5 minutes. Add pork to air fryer and drizzle with any remaining marinade in bag; air fry 1 hour 15 minutes or until pork is very tender, stirring every 15 minutes. Transfer pork and any drippings to large bowl; coarsely shred with 2 forks. Makes about 3 cups.

  3. Serve pork in tortillas topped with onion and cilantro along with hot sauce garnished with lime wedges, if desired.
