Preheat oven to 350°. Oil a 12-cup muffin tin with cooking spray

Combine flours, sugar, baking powder, baking soda, salt and nutmeg in a large bowl

Place banana, spinach & kale blend, eggs, vanilla extract and coconut oil in a blender or food processor, and blend until smooth

Add the wet spinach mixture to the dry ingredients and stir until just combined

Divide batter between muffin cups. Bake for 20 to 22 minutes or until a toothpick inserted in the center of a muffin comes out clean
