In a large sauté pan, cook bacon over medium-high until crispy, 3 to 5 min. Set aside bacon to drain on paper towels

Drain all but 2 tbsp. of fat from pan. Add onions and green pepper to pan and sauté over medium heat until tender, about 5 min

Place sautéed vegetables in a large slow cooker. Add remaining ingredients and stir

Cook on LOW for 3 hours. Let rest 30 min. to allow sauce to thicken before serving
