Directions

Preheat oven to 450°. Place an oven-proof wire rack in a rimmed baking pan; set aside

Combine flour and seasonings in a shallow dish; set aside. In a separate shallow dish, combine the panko breadcrumbs with the Parmesan

Dredge cod fillets in flour mixture and shake off excess

Dip the flour-coated fillets in the egg, shake off excess and immediately transfer to panko mixture. Press fillets into crumbs, flip and repeat

Spray fillets generously with cooking spray and then place, sprayed side down, on wire rack in pan. Spray tops with cooking spray

Bake until 145° in center and golden-brown, about 10 to 12 min

Serve immediately with a small microwave-baked potato and Stewed Green Beans and Tomatoes.
