Preheat oven to 225°. In a large bowl, add the egg whites and whisk until light and frothy, about 3 – 5 minutes. Add in the vanilla and whisk to combine. Add the nuts and fold in until coated

In a small bowl, mix together the brown sugar and the cinnamon. In batches, mix the cinnamon sugar mixture into the nuts until combined

Line two large baking sheets with parchment paper. Lay out the nuts into a single layer, dividing them between the two baking sheets

Bake for one hour, stirring nuts every 15 min. Let cool completely
